Krusteaz Pumpkin Mixes

I won several Krusteaz mixes as a door prize at a foodie event. (Thank you, Joellen!) Three of them were pumpkin-flavored. A friend of mine tells me that Krusteaz is pronounced “crust-ease.” Can we all just agree to “crew-stee-azz?” It sounds so much more exotic, and these mixes are out of the ordinary.

Pumpkin Spice Quick Bread Mix

Leave the oven off.
Mix it as directed, and
Eat it with a spoon.

Seriously, it’s that good. If you really must be conventional, though, bake it. Perhaps this would be an acceptable compromise between the box and your individuality: roll an 8-ounce block of cream cheese into a cylinder slightly shorter than the length of the bread pan. Lay it atop the batter just before baking. You could sweeten the cream cheese first, but you don’t have to.

Fantastic! Because you have to add only water to the mix, I assumed it wasn’t going to be good. But it was really good: perfect pumpkin pancakes.

Pumpkin Spice Supreme Muffin Mix

If you don’t prefer
Jumbo-sized muffins, then you
Hate America.

Why make a muffin mix yeilding eleven standard-sized muffins? It’s eight or twelve, yo! But who’d make a standard-sized muffin? It’s jumbo or nothing, and my tin has six holes. This mix will fill around four. Fear not! You can augment it:

You Will Need:

¾ cup brown sugar
¼ cup + 2 Tbs olive oil
1 cup cake flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp nutmeg
¼ tsp cinnamon
¼ tsp ginger, optional
A full pinch cloves
A full pinch salt

1 egg
1 Tbs sour cream placed in ⅓-cup measure, topped off with (2%) milk

¾ cup (packed) raisins

How To Do It:
  1. Place paper liners into a six-count jumbo muffin tin.
  2. Then, decide whether you want to blend the additional ingredients into the box mix, or layer the two.
  3. To incorporate, stir the dry ingredients into the dry Krusteaz mix and proceed with package directions, adding the wet ingredients along with the egg called for in the package directions. Once the mix is fully prepared, stir in the raisins.
  4. To layer, prepare the Krusteaz mix as directed, stir in ½-cup of the raisins, and distribute the batter among the muffin cups. Mix all remaining ingredients thoroughly and distribute over the Krusteaz batter.
  5. Bake at 400˚F for 20 minutes, reduce temp to 350˚F and continue to bake for about 25 more minutes, or until a tester comes out clean.

You’ll wind up with large, dense, beautiful muffins. Although you added spice cake batter, you didn’t add so much that you lost the overall pumpkin taste. They’re very, very good … just short of stellar. I recommend treating each one as two servings. I like to blur the line between cupcake and muffin and frost these bad boys. One half-batch of maple frosting is just enough.

These keep well, fully cooled and tightly wrapped. You can also make the frosting ahead of time and keep it refrigerated; soften on the countertop for an hour or so before using. This way, you can tote them along with you on a weekend with friends, and whip them out unexpectedly one morning.

    • It’s been a really long time, but if memory serves, my guess is that neither the bread or muffin mix would fill a standard Bundt pan. The augmented option I posted probably would.

  1. Should I make it as package directed or do I need to leave out something. I cant find anyone on the internet thats tried it. It sure would make a pumpkin roll much easier.
    Any thoughts would be appreciated.

    • The three things on this page are a quick bread, pancakes, and muffins. I don’t think any of those would work well as a rolled cake. I think you should start with a cake mix, rather than a bread, pancake, or muffin mix. Rolls are usually made with sponge cakes, which are light and soft. I’ve never heard of a boxed cake mix that said on the label that it was in fact a sponge cake, but maybe they do exist. I am aware, though, that there are plenty of blog posts claiming to tell you how to turn a box cake mix into a sponge cake. Maybe that’d be worth exploring. I’m not sure if Krusteaz makes a pumpkin cake mix, but I know that some other brands do. If you’re sold on Kruteaz, though, it might be possible to turn one of their spice cakes or white cakes into a pumpkin cake by adding pumpkin spices. Hope that helps.
