These Fire and Earth Wet Burritos are meatless, and could be easily made vegetarian. I would serve them to any guest, vegetarian or not. They’re so good!
Fire and Earth Wet Burritos

Ingredients
Bacon fat
Fire and Earth Burritos, with the cheese and chopped tomatoes held back
Enchilada Sauce
7½ oz. shredded or sliced pepper jack
Cilantro, for garnish
Sour cream, for serving
Directions
- Preheat the oven to 375°F.
- Lightly grease a baking dish with bacon fat. Set aside.
- Place the (cold) burritos seam-side down in the baking dish so they don’t unroll.
- Pour the sauce over the burritos. Leave the ends slightly exposed if you like a little bit of “crunch” on the tortilla.
- Top with cheese.
- Cover with foil and bake for 20 minutes. Remove foil and continue to bake until the sauce to bubbles and the cheese is completely melted and starting to brown, about 30 minutes.
- Top with chopped fresh tomatoes, cilantro, and sour cream.
Notes
- Substitutions: butter or baking spray for the bacon fat; Monterey Jack, cheddar, or a Mexican cheese blend for the pepper jack
- You will not need a full recipe of Fire and Earth to make these wet burritos. You will, however, need a full batch of the enchilada sauce.

These wet burritos are very good, very indulgent, and very filling.
I consider “prep” to be the things you need to do to the ingredients before you start following the directions. “Following the directions” is what I consider to be “cooking time.” So, since you’re doing the prep while the burritos bake, I’m calling is “zero,” since it doesn’t add any time. However, the ingredient list does include two ingredients that must be made from scratch in advance.
The directions assume that the Fire and Earth mixture has been refrigerated, and is being rolled into the burrito cold. If not, your baking time will be significantly shorter.
It’s very easy to reheat individual portions in the microwave. They’ll be nearly indistinguishable from what they were straight out of the oven.

Oh, I think it’s a decidedly American twist on Mexican cuisine. Or maybe I should say “was,” because I think they’ve fallen out of fashion somewhat, or go by a different name, like “Enchilada-Style Burritos.” I should probably change the title of this post, so no one realizes what an antique I am.

Honestly, you had me at burrito! The flavour combination is absolutely moreish, and I tend to get a craving every 4 to 6 weeks. I have made burritos before, they are definitely a labour of love.
