November 11 is Narodowe Święto Niepodległości, the Polish 4th of July. To celebrate, we tested a recipe from The Spruce: a wonderful way to prepare potatoes. Polish Boiled Potatoes with Onion and Dill pairs nicely with ham, beautifully with fish. It’s homey, yet enough of a departure from everyday fare that you’ll really enjoy it. 5 out of 5 stars (5 / 5). How many servings you’ll get from this recipe really depends. 6 large red potatoes, peeled and cut into medium chunks
1 cup caramelized onions
1 tsp salt
2 Tbs chopped fresh dill

    • I could eat potatoes day and night if they’re paired with zest either rich or zesty.

    • It does take a while to caramelize onions, but yes, other than that, it’s a breeze, and quite tasty.

Actually, to be honest, I had no idea what Narodowe Święto Niepodległości was…so thank you for sharing. Also, I’m craving a huge batch of these potatoes like you wouldn’t believe right now. I love the addition of caramelized onions and dill. Perfect side dish for a cold night! 🙂
